INDIVIDUAL ORANGE CHEESECAKES

I read it from the FamilyCircle Cheesecakes Pavlovas & Trifle yr. 1994. I've tried the cheesecake and its very tasty plus its easy to make it. Again, no baking required.

Preparation time :
40 minutes + overnight refrigeration
Total cooking time :
Nil
Makes 8

Crumb Crust
250g plain sweet biscuits
150g butter, melted

Filling
4 oranges
250g cream cheese, softened
1 teaspoon grated orange rind
3/4 cup sweetened condensed milk
2 tablespoon lemon juice
1 table spoon orange juice

To make crust :
Place biscuits in food processor bowl, process 30 seconds or until finely crushed. Add butter, process further 15 seconds. Divide mixture evenly between the tart tins. Press biscuits mixture firmly into the base and sides. Refrigerate while preparing filling.

To make filling :
  1. Place oranges on a board. Cut a 2 cm slice off each end of orange  to where the flesh starts. Cut skin away in a circular motion, cutting only deep enough to remove all white membrane. Separate segments by cutting between membrane and flesh. Do this over bowl to catch any juice. Reserve 2 or 3 segments for each flan. Cut remainder in small pieces.
  2. Using electric beater, beat cream cheese and rind in a small mixer bowl until light and creamy. Gradually add condensed milk, lemon and orange juice. Beat on medium speed 5 minutes or until smooth ans increased volume. Fold in chopped orange.
  3. Pour mixture evenly into prepared tart biscuits; smooth surface. Refrigerate overnight. Decorate with whipped cream, slivers of orange rind and reserved segments.

Image Matters

This is a very useful guide which I read in the Cleo February 2010 and it encourages me to share this with everyone who is currently surfing my blog.
Want to get notices at work for all the right reasons? Then think of yourself as a product that you are marketing. Create the right impression :

  • Get along with everbody : Good rapport with everyone from your boss to the front-desk girl, shows that you have impressive people skills.

  • Be punctual : Arrive on time and don't make a habit of leaving early. Punctuality shows that you have a good work ethic.

  • Seek out new skills : Do a computer course or other extra training to enhance your ability to do your job. Let your boss know you have shown this initiative.

  • Be a problem solver : If you're going to gripe, always make sure you can suggest solutions - your boss is more likely to listen.

  • Dress professionally : Save midriff tops and mucro-minis for dance clubs and make sure your work clothes look stylish and feminine without being sexy.

  • Thank co-workers : At the end of a big project send an email to everyone on your team to say 'thank you' and how much you enjoyed working with everybody.

  • Network with colleagues : Let people know that you want to move up or would like to take on more challenging responsibilities - word of mouth will often help you hear about new opportunities before anyone else.

  • Record your achievements : Keep a folder on your computer (with hard copies) where you keep all emails that favourably comment on your performance and record benefits you have brought to the company e.g. new clients, a better bottom line or better filing system. Use this information to ask for a pay rise or promotion.

Stretch Your Travel Money

I read this from Women's Weekly November 2008. You can actually get more of your budget while on holiday. With a good planning, flexibility, a dash of adventure and these smart ringgit-saving tips, you can virtually create your dream holiday.

ASK FOR DISCOUNTS
Fying a day before or after your intended date can mean a big price differences, so ask about this. Staying for an extended period at the same hotel can also mean a free night thrown in. If you have a flexible schedule, wait for last-minute travel deals.

PICK UP A LOCAL GUIDE
Get other traveller's insights from websites such as http://www.tripadvisor.com/. Travel  journals are also helpful, but for up-to-date information, pick up a local guide on arrival.

GO PUBLIC
Save yourself the stress and cost of car rentals and manic taxi drivers. Most developed citites have a good network of buses, subways and trains.  At the airport, board city shuttles that will drop you off downtown where there is likely to be a subway station with trains that can take you to your hotel within minutes - and for much less money.

EAT AS THE LOCALS DO
Hotel deals that include breakfast are often more costly than they sound. So, unless you're an early riser who can really pack it in at the Continental buffet, head to the cafe across the street for local fare at half the price.

TRAVEL LIGHT
Some hotels or motels have complimentary-use laundry facilities - ask about this in advance and you can bring fewer changes of clothes. It'll also mean more luggage space for that local designer dress.

USE YOUR ATM CARD
Instead of carrying around wads of money and changing currency, use your ATM card. It's convenient and offers better exchange rates.

Chocolate Truffles

It's definitely delicious. Just tried out this recipe today which I found in Her World February 2010 mag. and it was very easy to make because it doesn't involve any baking!. My kids ate the first batch and they are craving for more. So, have fun trying it :)

75ml fresh cream
100g dark chocolate chips
50g dark cocoa powder

1.  Place the chocolate chips in a heatproof mixing bowl. Heat the cream in a saucepan until it starts to boil and rise to the side of the saucepan. Pour the cream into the chocolate chips and using a whisk, QUICKLY incorporate the chocolate into the cream until it produce a thick chocolate slurry. Place this bowl in the fridge for at least 3 hours until it sets and is hard enough to mold later.
2.  By using a teaspoon, scoop out the mixture. Drop the scooped mixture one by one in a square container containing the cocoa powder and coat it gently by rolling it in the bed of cocoa. You can use the edge of the container to roll the truffle into balls by using the teaspoon.
3. Once you have rolled all of the truffles, you may store them in this container in the fridge until you are ready to serve them.

Preparation time : 15 minutes plus 3 hours setting time
Makes : 20 pieces

Tips on Finding The Perfect Laptop

I read these tips from Women's Weekly October 2008.
There are 5 important things to consider when searching for a perfect laptop.

  1. SIZE MATTERS - If you are always on the move and need to use your laptop for a short period of time, you need to go for ultralight types. And if you are going to be spending hours in front of it, it is best to opt for a larger display.

  2. STORAGE CAPACITY - If the laptop will be your primary computer, you need at least 120GB but if it is just a supplement, then a 60GB hard drive will do.

  3. ENOUGH MEMORY - The more applications running at the same time, the higher the memory or RAM is needed. At least a 512MB RAM is required for word processing and internet surfing.

  4. STAY CONNECTED - If you always need to stay connected, make sure that the laptop that you are buying is equipped with WiFi capable unit.

  5. STICK TO YOUR BUDGETS - Laptops are significant investments, so be wise and practical. Set a maximum amount for which you are willing - and able - to spend.
